Grate, drain and squeeze
Wash zucchini and dry. Cut off both ends. Slice zucchini in half lengthwise. Scoop out any large seeds and discard.
Grate zucchini with a box grater, using the side with the largest holes. Place the grated zucchini in a colander placed over a bowl.
For each pound of zucchini, toss in 1 teaspoon of salt.
Allow zucchini to drain for 15 to 20 minutes.
Squeeze handfuls of grated zucchini. allowing liquid to go into the bowl. Place on a paper towel-lined plate and pat dry.
Taste the zucchini. If it happens to taste salty, rinse and pat dry again.
Zucchini won't be completely dry but will have lost much of its liquid.
Now it is ready to layer into a quiche or serve as pasta topped with your favorite tomato sauce.
Stir the drained zucchini liquid into soups and sauces. Use is as part of the liquid to cook rice.
Zucchini is a source of dietary fiber, vitamins A and C and potassium. Zucchini is very low in calories.
