Thanksgiving Oatmeal Roast some extra sweet potatoes and be ready to make a hot, satisfying breakfast the next day
Ingredients:
1 baked sweet potato, peeled
1 cup old-fashioned oats
1 cup dairy or non-dairy milk
1/2 cup molasses or pure maple syrup
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
a little grated orange zest
Chopped nuts, for serving
Directions:
Cut the peeled, baked sweet potato into chunks right into a medium saucepan. Mash the chunks with a potato masher or fork.
Add remaining ingredients, except nuts, and mix until well blended. Cook over medium heat until oats are tender. Mixture will thicken as it cooks. It is important that you stir constantly. The process will take 10 to 12 minutes.
Serve immediately with milk to pour over the oatmeal. Offer chopped nuts at the table.
