|Salad of Citrus
Quick and convenient when produce is prepped ahead
2 tablespoons cider vinegar
2 tablespoons honey, preferably local
2 squirts Dijon mustard, about 2 teaspoons
1/4 cup fresh citrus juice
1 1/2 tablespoons olive oil
Salt and pepper, to taste
Fresh greens of choice
Red onion slices
Use a whisk to blend ingredients for vinaigrette. Set aside.
Toss greens with orange segments, grapefruit segments, red onion slices and pomegranate seeds.
Pour just enough vinaigrette over salad so that is glistens but isn't drowning in the dressing. Refrigerate remaining vinaigrette in a sealed jar to use another time.
Prep produce as soon as you come home from the grocery store. Having peppers, onions and citrus all prepared in the refrigerator wiil save you time when you are making meals.
Segment citrus and store it in the refrigerator. It makes it easy to get your vitamin C for breakfast. And it is a juicy addition to a salad of fresh greens.
