Trail-Ride Bagel Sandwich Eat it for breakfast or take it on the trail
8 ounces cream cheese, softened (dairy or non-dairy)
1/2 cup chopped dried fruit of your choice
grated zest from 1 orange
juice from 1/2 of an orange
1/4 to 1/2 teaspoon cinnamon, or to taste
1 or 2 squirts of honey, or to taste
6 bagels, split in half
In a medium mixing bowl, blend cream cheese with chopped dried fruit, grated orange zest, orange juice, cinnamon and honey.
Spread the mixture on bagels to make sandwiches. Wrap each sandwich in plastic and seal in a zip-top bag. Place in freezer.
If planning to have a sandwich for breakfast, take one out of the freezer and put it in the refrigerator overnight.
If you are taking a sandwich out of the trail with you, take it out of the freezer and put it in your backpack as you walk out the door. By the time you're ready for a snack, the sandwich will be thawed and ready to eat.
Chopped nuts are a nice addition to the cream cheese filling.
