Perfect summer snack
1 cup cooked garbanzo beans, drained
1 very ripe avocado, sliced
3 tablespoons tahini
1/2 lime, juiced
1/2 lemon, juiced
1/3 cup fresh cilantro
3 whole garlic cloves
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup extra virgin olive oil
Pita chips, toast or fresh vegetables, for dipping
Place all ingredients in work bowl of a food processor. Save a little of the juice. Process until mixtue is well blended and almost smooth.
Scrape into a bowl. Pour the remaining juice over the top to prevent oxidation while in the refrigerator.
At serving time, stir in the juice and taste for seasoning. Garnish with a few chickpeas, sliced avocado, chopped cilantro and a drizzle of olive oil.
This hummus makes a delicious spread on wraps.
Try massaging some Avocado Hummus into a bowl of sliced kale. It makes a wonderful dressing. Just add any other salad ingredients you enjoy to the bowl of kale.
