1/4 cup torn or chopped fresh basil (do not pack the basil into the measuring cup)
Extra-virgin olive oil
Start heating a large pot of water for pasta.
Wash tomatoes. With the tip of a paring knife, cut a small x in the bottom of each tomato. Bring a pot of water to a boil. Turn off heat and gently drop tomatoes in the hot water. Leave in the water for 20 or 30 seconds. Using a slotted spoon, transfer the tomatoes to your work surface. Start at the x and peel the skin right off of each tomato.
While pasta cooking, chop the peeled tomatoes small. Place in a large bowl. Add garlic and basil. Sprinkle with sea salt and drizzle a generous amount of olive oil over all. Toss gently with a spoon.
Drain pasta. Add hot pasta to tomato mixture. Toss. Taste and season with salt and freshly gorund black pepper, if necessary. Serve immediately.
I normally use spaghetti. Bow tie pasta is nice, too. Use your favorite shape.
Leftovers heat up nicely for lunch the next day. Have mints handy:-)
